1 box penne noodles
2 cloves of garlic, minced
14 oz coconut milk
1 tbsp vegan cream cheese
1 tsp arrowroot powder
1 cup tomato sauce
½ vidalia onion, diced
3 tbsp vodka (optional)
1 tbsp nutritional yeast
1 tsp Tony’s Creole Seasoning
1 tsp garlic powder
1 tsp onion powder
½ tsp red chili flakes
Salt and pepper to taste
In a well oiled pan, cook onions on medium heat for 3-5 minutes or until translucent.
Add in your minced garlic and cook for 60 seconds or until fragrant. Then add in your vodka and cook until the moisture is reduced in half.
Boil noodles according to box instructions.
Add in coconut milk, arrowroot powder, and cream cheese. Stir for 2 minutes or until creamy.
Add tomato sauce and ALL seasonings and turn heat to low. Once the noodles are done boiling add in the noodles.
Adjust seasonings to your liking.
Garnish with fresh basil and a pinch of nutrition yeast.
