Vegan Cosmic Browniezzz

I made my childhood favorite snack. Vegan cosmic brownies.

These taste exactly like the store ones...absolutely delicious. This recipe is pretty simple and to the point. I was inspired by a youtube video I saw and decided to veganize this recipe. Remember to be patient when cooking and to cook with lots of love. I hope you enjoy this recipe. xoxo


Tips

  • When making ganache you usually need a 1:1 ratio, but if the ganache is too thin add more chocolate chips, if it is too thick add more coconut cream.

  • A 9x13 baking dish will work if you prefer thinner brownies.

  • Flax egg replacement will work, but use the equivalent to 2 “regular” eggs.

  • If the chocolate chips aren’t melting then place them in the microwave, but try to avoid this if you can.

  • Check on the brownies at the 20 minute mark and then bake them for more time if needed.

  • If you don’t have access to coconut sugar you can use any sugar you’d like.

Ingredients

  • 13 tbsp plant butter

  • 1 cup coconut sugar

  • ⅔ cups light brown sugar

  • 3 tsp maple syrup

  • 3 tbsp plant milk

  • 6 tbsp Just Egg

  • 1 ¼ cups unbleached all purpose flour

  • ¾ cups unsweetened cocoa powder

  • 1 tbsp cornstarch

  • ¼ tsp salt

  • ½ tsp baking powder

Ganache

  • ½ cup coconut cream

  • ½ cup vegan semi-sweet chocolate chips, refer to tips

Preparation

  1. Preheat the oven to 350F.

  2. Line a 8x8 baking dish with foil or parchment paper and spray with baking spray, set aside.

  3. In a large bowl, use an electric mixer to beat sugars, vanilla, butter, and Just Egg until incorporated. This should take about 90 seconds.

  4. In a medium sized bowl whisk together flour, baking powder, cornstarch, salt, and cocoa powder. Add in your milk to the wet batter and then slowly add in your dry batter. Mix until combined. The batter will appear thick and that is normal.

  5. Using a spatula, spread the batter evenly onto the prepared 8x8 baking dish. Bake for 20-24 minutes or until a toothpick inserted comes out clean. Let the brownies cool for 10-20 minutes.

  6. Next work on the chocolate ganache by heating the coconut cream in a small saucepan until it begins to gently simmer. DO NOT LET IT COME TO A FULL SIMMER OR BOIL!

  7. Remove the cream from the burner and add in the chocolate chips and let it sit for 2 minutes or until the chocolate starts to soften. Stir the chocolate chips in and allow the ganache to cool. Refer to tips.

  8. Spread the ganache on top of the brownies and place in the fridge for 15 minutes. Top with vegan sprinkles and enjoy!
