  • 1 whole portobello mushroom (slices)

  • 1 cup oyster mushrooms

  • 1/2 tsp paprika

  • Pepper

  • 1/4 tsp parsley

  • 1/2 tsp cumin

  • 1/4-1/2 tsp thyme

  • Garlic Powder

  • Chili Powder

  • 1 tsp minced garlic

  • 1 tsp soy sauce

Tzatziki Sauce

1-3 tbsp grated cucumber

1-2 tsp lemon juice

1 tbsp dill (finely chopped)

1/2 vegan yogurt

Salt to taste


  1. Wash mushrooms and place in oiled pan with garlic. Cook for two minutes.

  2. Add in your soy sauce and cook on medium low for an additional 1-2 minutes. Add in seasonings and water if needed so mushrooms don't stick. Cook for 5-7 minutes or until they cook down.

  3. Combine all ingredients for your vegan Tzatziki into a small bowl and mix together. Set aside for 10 minutes before prepping your sandwich. (You can also do this step first and then cook the mushrooms).

  4. Put your gyro together and enjoy!
